Air-Fryer Roasted Tomato Bruschetta

Heirloom cherry tomatoes are bursting with bright flavor. A quick roast in the air fryer will make throwing this bruschetta together a breeze! Alternatively, you can roast in the oven at 400F for about 30 minutes. Use on crusty bread, toast, bagels, as a sandwich spread, a burger topper, or mixed with pasta.

Yield: About 1 1/2 cups

Ingredients

1 basket (about 16 oz) heirloom cherry tomatoes

3 tablespoons olive oil, divided

1 - 2 tablespoons minced garlic, to taste

2 tablespoons fresh basil ribbons

salt and pepper, to taste

Method

Chop the tomatoes into quarters and place on a sheet of foil with the edges folded up to create a rim.

Drizzle with one tablespoon of olive oil and sprinkle with a little salt and pepper.

Roast in the airfryer at 400F for 15 minutes. Remove from heat and allow to cool.

In a small bowl, add roasted tomatoes, remaining olive oil, garlic, basil, salt and pepper. Stir to combine.
