Baked Broccoli Cheese Bites

Baked Broccoli Cheese Bites - Perfect for Game Day!

Simple and tasty, these little handheld bites are perfect as an appetizer or gameday snack!  Created by our own Joni Marie Newman.

NOTE: This recipe is written to be made either plant-based or with meat and cheese added. If you want to make the vegan version, make sure to use vegan versions of the mentioned ingredients, such as vegan shredded cheese.

Yield: 24 mini bites or 12 muffin sized bites

Ingredients

2 tablespoons vegetable oil

½ cup diced onion (any color)

2 tablespoons minced garlic

3 cups chopped broccoli florets

1 1/2 cups shredded cheddar cheese, divided

1 cup panko style bread crumbs, divided

½ cup soft silken tofu

Method

Preheat oven to 350F. Have ready a mini muffin pan (for mini bites) or a regular muffin pan (for muffin bites) sprayed with cooking spray.

To a frying pan (with a lid) over medium-high heat, add oil. Saute onion for 3-5 minutes, until fragrant and translucent. Add garlic and chopped broccoli and cook for 2 to 3 more minutes. Cover with lid and remove from heat. The lid will trap the heat and continue to steam the broccoli. 

Into the bowl of your food processor, add cooked broccoli mixture, 1 cup shredded cheddar, ¾ cup of the panko, and tofu. Pulse until combined but still chunky.

Spoon mixture into muffin tin until about 3/4 full. Sprinkle tops with remaining cheese and breadcrumbs.

Bake for 15 to 20 minutes (mini),  20 to 25 minutes (muffin), or until breadcrumbs are slightly browned on top and mixture is fully cooked.

Serve hot or at room temperature.
