Satsuma Coleslaw

This simple salad packs a huge punch of flavor! Using the power of citrus and the crunch of cabbage, serve this salad up as a side, or add shredded vegan chicken, tofu, or your favorite protein to make it a perfect meal. Created by our very own JONI MARIE NEWMAN.

Yield: About 6 servings

Ingredients

For the Salad:

½ head cabbage, shredded

½ cup shredded carrots

1 ounce (1 cup) chopped cilantro

2 Satsuma tangerines, peeled and cut into segments

1 tablespoon fresh (or 1 teaspoon dried) dill

2 tablespoons sesame seeds

For the Dressing:

¼ cup rice vinegar

¼ cup sesame oil

1 teaspoon red chili flakes

1 tablespoon agave

½ teaspoon salt

Method

To make the salad, toss all ingredients in a large bowl.

To make the dressing, place all ingredients into a small bowl and whisk until well combined.

Toss with coleslaw and serve immediately.
