Steamed Broccoli with Roasted Garlic

This simple and flavorful dish boasts the antioxidant power of garlic, heart-healthy fats from olive oil, and calcium-rich broccoli. Prepare the broccoli to your preferred tenderness. Also tastes great mixed into pasta and served hot or cold.

Yield: 4 servings

Ingredients

20 peeled cloves of garlic, about 2 full heads

1 pound (454 g) broccoli florets, about 1 large head of broccoli

1/4 cup plus 2 tablespoons (90 ml) extra-virgin olive oil, divided

Sea salt to taste

Optional Add-Ins: Fresh cracked black pepper, red chili flakes, roasted sunflower seeds, parmesan cheese or nutritional yeast, prepared penne pasta - or any pasta - (makes a great salad cold or warm, see photo below)

Method

Preheat oven to 350°F (180°C, or gas mark 4).

Place garlic cloves in the center of a 10-inch (25-cm) square piece of aluminum foil. Add 2 tablespoons (30 ml) of the olive oil and a pinch of salt to the garlic.

Bring the corners of the foil to meet and twist closed to form a closed pouch and bake garlic for 30 minutes.

Steam broccoli to your desired tenderness.

Toss together broccoli, roasted garlic, remaining olive oil, and sea salt to taste.
